Chicken Recipes For Dinner
Fried
poultry and summer are an unbeatable pair. Regardless if you fry up a big batch
for a family reunion or want to go beyond the grill for dinner, here's one of
our favored fried poultry recipes along with a deliciously selection of side
dish recipes to accompany your deliciously fried bird. Serves 4 to 6 -
Ingredients: 1 per cut chicken - 1-1\/2 teaspoons salt - 1 teaspoon freshly
ground black pepper - 1\/2 teaspoon cayenne pepper - 1 cup buttermilk, shaken
well - 3 cups vegetable shortening - 3 cups all purpose flour - Directions:
Place the chicken pieces in a large bowl and season with the salt, pepper,
cayenne and toss to coat evenly. Cover with plastic wrap and refrigerate for
one hour. Pour the buttermilk in a large bowl and transfer the poultry to the
buttermilk, making certain all the pieces are coated. Heat the vegetable
shortening in a large, deep frying pan to 350 degrees F. Place the flour in a
large bowl. Remove the poultry from the buttermilk, letting the excess liquid
to drip off, and transfer the poultry to the flour and toss to coat well.
Working in batches, start with the larger pieces of poultry, shaking off excess
flour from the poultry and add to the frying pan in a single layer.
